3 Cups organic vegetable broth
2 Cups filtered water
2 Tbs. extra virgin olive oil
1 bulb or 6 very large freshly crushed garlic cloves
3 or 4 leaves organic Kale (sliced in strips)
3 or 4 leaves organic chard (sliced in strips)
½ stalk organic broccoli florets
2 organic Zucchini (cubed)
2 cans diced & peeled tomatoes
1 cup cherry tomatoes halved
½ Cup Kalmata olives (pitted and halved)
¼ Cup green olives (pitted and halved)
½ Cup capers
½ Cup good quality parmesan cheese cut in small pieces
½ box Spelt penne pasta
2 Cups organic Cauliflower
Salt and pepper to taste
Put all ingredients into a large soup pot. Bring to a boil. Simmer on low heat, covered for several hours. Add salt and pepper to taste.
